BRINJAL CURRY: IT'S A SPECIAL VEGETARIAN, ANDHRA CLASSIC CURRY AND MOUTH WATERING RECIPE

METHOD:
- FIRSTLY GRIND ROASTED CUMIN POWDER,MENTHI POWDER INTO POWDER AND GRIND THE ROASTED GASAGALU IN TO PASTE
- HEAT 1TSP OIL IN A KADAI ADD BRINJAL SLICES AND FRY UNTIL IT TURN IN TO BROWN COLOUR ON BOTH SIDES AND KEEP IT ASIDE.
- HEAT REMAINING 1TSP OIL IN KADAI ADD MUSTARD AND CUMIN SEEDS ALLOW IT TO SPLUTTER THEN ADD GINGER GARLIC PASTE AND STIR IT FOR 2MIN.
- THEN ADD REDCHILI POWDERSALT,TURMERIC POWDER,ROASTED CUMIN POWDER,MENTHI POWDER,CORIANDER POWDER AND MIX WELL.
- ADD 1 ½ CUP WATER TO THE MIXTURE AND ALLOW IT TO BOIL FOR 2-3 MINUTES,THEN ADD GASAGASALU PASTE AND TAMARIND PULP THEN CLOSE THE LID COOK ON MEDIUM FLAME FOR 6-7 MINUTES.
SERVE HOT WITH RICE OR ROTI.
