BRINJAL CURRY: IT'S A SPECIAL VEGETARIAN, ANDHRA CLASSIC CURRY AND MOUTH WATERING RECIPE



INGREDIENTS:


BRINJAL
250 GRAMS
CUMIN SEEDS
1/2 TSP
MUSTARD SEEDS
1/2 TSP
GINGER GARLIC PASTE
1 TSP
RED CHILI POWDER
1 TSP(AS DESIRED)
CORIANDER POWDER
1 TSP
TAMARIND PULP
2 TSP
CUMIN POWDER(ROASTED)
PINCH
MENTHI POWDER
PINCH
GASAGASALU (ROASTED)PASTE
2-3 TSP
SALT
AS DESIRED
OIL
2 TSP


METHOD:


  • FIRSTLY GRIND ROASTED CUMIN POWDER,MENTHI POWDER INTO POWDER AND GRIND THE ROASTED GASAGALU IN TO PASTE


  • HEAT 1TSP OIL IN A KADAI ADD BRINJAL SLICES AND FRY UNTIL IT TURN IN TO BROWN COLOUR ON BOTH SIDES AND KEEP IT ASIDE.


  • HEAT REMAINING 1TSP OIL IN KADAI ADD MUSTARD AND CUMIN SEEDS ALLOW IT TO SPLUTTER THEN ADD GINGER GARLIC PASTE AND STIR IT FOR 2MIN.


  • THEN ADD REDCHILI POWDERSALT,TURMERIC POWDER,ROASTED CUMIN POWDER,MENTHI POWDER,CORIANDER POWDER AND MIX WELL.


  • ADD 1 ½ CUP WATER TO THE MIXTURE AND ALLOW IT TO BOIL FOR 2-3 MINUTES,THEN ADD GASAGASALU PASTE AND TAMARIND PULP THEN CLOSE THE LID  COOK ON MEDIUM FLAME FOR 6-7 MINUTES.

SERVE  HOT WITH  RICE OR ROTI.
