BOBBATTU



One of my favourite sweets is Bobattu which is also known by the name of Puran Poli









INGREDIENTS:

CHANADAL
1CUP
ALL PURPOSE FLOUR/MAIDA
1/2CUP
JAGGERY
1CUP
SALT
A PINCH
CARDAMON POWDER
1/2TSP
BUTTER/GHEE
1TSP








METHOD:

ü  purpose flour,pinch of salt,2 tbsps oil and enough water to make a very soft and sticky dough.Knead well.

ü  Cook Chana dal in a cup of water in a pressure cooker till it becomes soft and mushy. After cooling, Grind to a fine paste.

ü  Heat a pan and add the dal paste and sugar or jaggery and cook further till they blend and form a lump such that you can prepare small balls for stuffing, stir it continously under low flame so that it does not stick to the kadai

ü  Add cardamom powder and pinch of salt and mix well. Turn off heat and cool. Prepare small lemon sized balls with this  mixture and keep aside.

ü  Grease your hands with oil to knead the dough and take a small portion of dough and flatten it to the  size of your palm

ü  Place a ball of “sweet lentil ball” in the centre and draw the edges of the dough from all sides to cover the sweet lentil ball completely.

ü  Take a sheet of transparent plastic wrapper and gently flatten each ball carefully with your fingers to form flat circular bobattu (grease your hands with oil/ghee  while flattening).

ü  Fry it on low flame on a hot tawa. Roast both sides till brown spots appear.

ü  Apply ghee on both sides when done.

ü  Serve warm with butter/ghee

NOTES:

·         WE CAN USE PLASTIC WRAPPER(I USED POLYTHENE COVER),INSTEAD OF THESE PLAINTAIN LEAF CAN BE USED IT GIVES BETTER RESULTS

·         YOU CAN STORE THE BOBBATLU FOR A FEW DAYS IN AN AIR TIGHTCONTAINER,OR IN THE REFRIGERATOR.
